Summer Salads



With summer in full swing I have been trying more healthier options since I am determined to get in
shape here are a couple salads that have been on my menu.



Broccoli Salad:
 5 cups of broccoli  florets (small pieces) / 1/3 chopped red onion /  1 cup of mayonnaise /
1 tbp cider vinegar / 1/4 cup sugar / 3/4 cup raisins / 1/2 c chopped pecans

In a large bowl, add broccoli, onion, raisins, and pecans mix together well

In a mixing bowl, combine mayonnaise, vinegar, and sugar. Once dressing is mixed add broccoli mixture and coat. Refrigerate until serving.





Grape Salad:
1 package of cream cheese softened (8oz) / 8 oz sour cream / 1/3 sugar
2 tb vanilla extract /  2 pd. seedless red grapes/ 2pd. seedless green grapes
3 tb brown sugar / 3 tb pecans

In a large bowl, beat cream cheese, sour cream, sugar and vanilla until blended. Add grapes and toss to coat. Cover and refrigerate until serving. Sprinkle with brown sugar and pecans just before serving.
